Rolled Sirloin Joint

Serves: 4

Ingredients

2 tbsp vegetable oil or beef fat
Sirloin of beef joint
1 glass red wine
2 tbsp vegetable oil or beef fat
400g can beef consommé

Method
  1. Heat oven to 200C/fan 180C/gas 6, put your oil or fat in a large roasting tray and in the oven for 5-10 minutes and season the beef joint.

  2. Place the beef fat-side down into the roasting tin and sizzle on the hob to release some of the fat.

  3. Then turn the beef in the fat/oil for 5 mins to seal and colour the beef.

  4. Now roast the joint for 10-15 mins per 450g for medium-rare, 15-20 mins per 450g for medium, 20-25 mins for medium-well and 25-30 mins for well done. Remember to turn it halfway through.

  5. Remove the beef from the roasting tin and put to one side. Cover it with foil and rest for 15-20 mins.

  6. Tip off any excess fat from the roasting tin, put the tin on a medium heat on top of the stove.

  7. Once it starts to sizzle, empty in the red wine, letting it to boil until it’s nearly all evaporated.
  8. Tip in the consommé and allow to simmer for another 4-5 mins. This will create a light sauce, rather than a gravy.
  9. Simmer for a few more mins before straining for a velvety finish. 2 tbsp vegetable oil or beef fat.
