Aberdeen Angus Sirloin Steak
& Red Wine Shallots
2 Aberdeen Angus Sirloin Steaks
8 brown shallots, peeled and quartered
4 tbsp balsamic vinegar
Salt & pepper
Large glass red wine (175ml)
150ml beef stock
Cook the shallots in a pan of shallow water for 2-3 mins.
Drain and set the shallots aside.
Lightly season your steaks with salt and pepper.
Heat 12.5g butter in a pan until sizzling.
Cook the steaks for 6 minutes, flipping at 3 minutes for a medium finish.
Remove the steaks from the pan and rest.
Add the rest of the butter and the shallots, then cook in the pan until brown.
Add the balsamic vinegar and wine and boil down until sticky, then add the beef stock and repeat.
Spoon the shallots over the steaks and serve with green beans and chips.
